Rosca de Reyes

On Three Kings Day, a family supper celebrates the day
similar to Christmas Day supper.
Part of the tradition is to have Rosca de Reyes (Kings' Ring).
Since we were celebrating for the first time, I wanted to make a Rosca.

The Rosca has baked inside it a small plastic doll which hidden.
The doll represents when Mary and Joseph took Jesus to Egypt
when King Herod came through and killed all the infants and toddlers.
Whoever get the doll in their slice is king for the day.
I admit I didn't bake a plastic doll or a bean into our Rosca because I forgot.

Maybe next year I'll remember.

I found a recipe that I had all the ingredients for and made it. I had to read quite a few recipes since I didn't have the candied oranges and limes, dates, quinces, or baby. The bread was super yummy and was requested for breakfast. Notes to the recipe below: I soaked the cranberries in grape juice and used milk instead of eggnog for the glaze.

Recipe Source: Yvette Marque-Sharpnack from Muy Bueno Cookbook

Rosca de Reyes with Cranberry-Almond Filling Eggnog Glaze
Yield: 12 servings

Ingredients:
For the Bread:
1 packet (1/4 ounce) active dry yeast (2 1/4 teaspoons)
1/4 cup warm water (about 110° F)
3/4 cup warm milk (about 110° F)
3 tablespoons sugar
1/4 cup unsalted butter, softened to room temperature
1 1/2 teaspoons salt
2 eggs
2 teaspoons grated lime peel
3 1/2 cups all-purpose flour, divided

For the Cranberry-Almond Filling:
3/4 cup organic dried cranberries, soaked in 1/2 cup brandy
8 tablespoons butter, softened to room temperature
1/3 cup all-purpose flour
3/4 cup finely chopped blanched almonds
3 tablespoons sugar
1 teaspoon freshly grated orange peel
1 teaspoon almond extract
¼ teaspoon vanilla extract
¼ teaspoon ground cinnamon

For the Eggnog Glaze:
1 cup powdered sugar
1/2 teaspoon vanilla extract
Dash freshly grated nutmeg
4 to 6 teaspoons eggnog

Garnish:
Maraschino cherries

Directions:

In a large mixing bowl, dissolve the yeast in the water and let it foam up for a minute or two. Blend in the milk, sugar, butter, salt, eggs and lime peel. Stir in two cups of the flour, a little at a time. Beat for 2 minutes. Add remaining flour until you have soft, workable dough. Note: Your dough will be sticky.

Dump the dough out onto a lightly floured board and knead until smooth, about 5 to 10 minutes, adding more flour as needed to prevent sticking. Place in a lightly oiled mixing bowl large enough to accommodate dough when doubled in size. Cover with plastic wrap and let it rise in a warm place until doubled (about 1 1/2 hours).

Meanwhile, prepare the Cranberry-Almond Filling. Drain the dried fruit of its liqueur. In a small bowl, combine the drained fruit with remaining filling ingredients. Cover and refrigerate.

When dough has risen and doubled in size, punch it down and turn it out onto a lightly floured board, kneading just enough to release any air bubbles. Roll out the dough into a 9- by 30-inch rectangle. Crumble the filling over the dough to within 1 inch of the edges. Starting along a long side, tightly roll up the dough, pinching edge against loaf to seal.

With a sharp knife, cut roll in half lengthwise, carefully turn cut sides up, and loosely twist ropes around each other, keeping cut sides up.

Carefully transfer the bread to a greased and floured baking sheet or pizza stone and shape into a wreath, pinching ends together to seal. Let it rise, uncovered, in a warm place until puffy, about 45 minutes.

Preheat oven to 350° F.

Place the cherries (cut in half) on top of the wreath to decorate.

Bake wreath until lightly browned, about 20 to 25 minutes, covering the wreath loosely with foil after the first 15 minutes, as it will brown quickly.

While wreath is baking, prepare eggnog glaze.

Combine sugar, vanilla, and nutmeg. Stir in enough eggnog to reach drizzling consistency.
When wreath is done, transfer to a cooling rack with wide spatulas or a pizza peel. Cool for a few minutes then drizzle the glaze and grate a little bit of fresh nutmeg over the icing.

Gingerbread Cookies

When we went to Nauvoo, we got gingerbread cookies at the Scovil Bakery.
They were really yummy, and I wanted to make them at home.

Every Christmas my Mom would make Gingerbread Cake
served with applesauce and whipping cream.
One year she decorated a wooden Christmas tree
with Gingerbread Men as ornaments for people to eat.

We made them for the Thanksgiving feasts at school
and then again at Aunt Jill's house when we visited.

Here is the recipe:

Gingerbread Cookies
Recipe from the Scovil Bakery, Historic Nauvoo

In a small bowl, whisk together:
2 1/4 tsp. cinnamon
3/4 tsp. cloves
2 1/4 tsp ginger

and set aside.

In a large bowl, cream together:
3/4 cup butter
2 eggs
1 cup molasses
1 1/2 cups sugar.

then,
1/2 cup hot water.

In a separate bowl, combine:
6 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
the spices mixture prepared above,

then add this mixture to the wet ingredients. Add more flour if the dough is too sticky.

Refrigerate overnight.

Roll out dough on floured surface. Use cookie cutter to cut out cookie shapes. Bake at 350 degrees for 7-8 minutes for soft cookies; 9-10 minutes for crisp cookies.

Notes: Cookies freeze well and are softer and more flavorful after freezing. Also spraying the mixing bowl with Pam before adding the ingredients help the dough not to stick.

Caramel Syrup

We bottled 42 pints of caramel syrup for Hurricane's Bake Sale.
He prepared for pre-orders before the bake sale.
All of the syrups were spoken for by people.
We will make more.

Watermelon Cake

We had this for family home evening.
Watermelon ice cream...
My Gamma Rae made it one summer.
I remember sneaking into the freezing and getting caught.

I decided to make it again this summer.
I still don't have a good method making it to share a recipe.

We enjoy it around here.
In the background, you can see our grape juice.

She loves something sweet.
Before Sweetheart left for work,
we made trifle for him to share with his co-workers.

Happy Birthday to a wonderful lady!

Little Chefs: Green Eggs and Ham and Sugar Cookies

We had a big day.

Since it was April Fool's day,
we made scrambled eggs and dyed them green.
Little Chefs mixed the eggs.
We made ham roll ups after warming up the ham.

Then we made frosting.
The children stirred the softened butter and confectioners sugar.
They needed a little milk to make it work.
The children liked frosting a lot.

*Notice there is no refrigerator in the background.
We continue to tile.

New Church

A new chapel was built in our neighborhood.
I was asked to help with the refreshments.

We had veggies, brownies, and blondies.
Many women helped in the kitchen.

Hurricane went with me to buy the refreshments.
He was happy to finally get a snack after shopping.

Raspberry Chocolate Triffle

We were invited to the Romeny's home
for Christmas Eve.
We were asked to bring dessert.

Celie, a dear friend from Pennsylvania, gave us this recipe.
It is colorful and yummy.
Since I didn't own a trifle bowl,
it was an excellent opportunity to get one.

He made the whole thing.
It was really good!

Easy Chocolate Trifle

Milk
2 pkgs JELL-O INSTANT Chocolate Pudding 1 tub cool whip topping
1 pan brownies
Raspberries

POUR 2 1/2 cups milk into large bowl. ADD 2 pkgs (4-serving size each) JELL-O instant Chocolate Pudding. BEAT with wire whisk until well blended. MIX in 1 tub Cool Whip Whipped Topping, thawed. LAYER brownie cubes*, pudding and Cool Whip mixture, raspberries or strawberries and additional 1 tub Cool Whip in large glass bowl as desired. REFRIGERATE 1 hour or until ready to serve.
Makes 16 servings.

Celie's notes

* I always make a 9x13 cake pan size, so there are plenty in the trifle, plus some to munch on while preparing.

*The layers are repeated twice, with the top one ending with the chocolate pudding mix, a dollop of plain Cool Whip in the middle surrounded by raspberries/strawberries. (A sprig of mint on the top would add a special ”tea party” touch, methinks!)

10th Annual Pie Party

We are blessed with friends, food, and a wonderful evening.
Many people helped us get ready
by helping clean, make pie, and set up.
We didn't start anything for the pie party
until about 72 hours before the event.

We were trying to put everything away
in our house from room shifts/painting.
Counting how many come in and out is futile.

Cookies

Sunday evening they had a few minutes.
They made a double batch of cookies for "school."

We were taught to make little cookies so you could have 2
and feel like you're getting a special treat.

They are become great cooks.
Being in the kitchen is something that is fun.

Watermelon Ice Cream Cake

Gamma Rae would make a fun ice cream cake.
I remember her making it only once.

We decided to have it as a family home evening treat.

The treat is made from lime sherbert, strawberry ice cream, and mini chocolate chips.

Hurricane liked it so much that he wrote about it in his class.

Watermelon Ice Cream Cake
1 quart Lime Sherbert
1 quart Strawberry Ice Cream
2 cups mini chocolate chips

Line a 6 quart bowl with wax paper or parchment paper. Soften the Lime Sherbert and line the sherbert like the rind of a watermelon. Freeze until hard. Soften the Strawberry Ice Cream and mix it the mini chocolate chips. Add the mixture on top of the sherbert. Freeze. Once frozen, invert the "watermelon" half and cut with a knife and serve like watermelon.

Pumpkin Roll

We had a pumpkin left from Halloween that wasn't cut into.
I decided to use it up and make pumpkin rolls and soup.

I ended up making 6 rolls.
The rolls were used for mutual
for a temple celebration.

Here is a picture step by step how I made it.
The recipe is below.

Beat 3 eggs until very thick.
Fold in dry ingredients (ingredients below.)

Gradually add pumpkin and lemon juice.

Pour batter into pan. The batter will not fill the pan.
Line the pan with parchment.
The cake will make it easier to remove.

The cake will be very thin.

Turn out on a tea towel dusted with powdered sugar and roll.
Let cool for 30 minutes. After semi-cool, unroll and fill with filling.
Filling recipe below.

After it is frosted, reroll.

Wrap in saran wrap and freeze.
Cut and serve when needed.

Pumpkin Cake Roll
recipe from: Jill Kirkham

Beat until very thick:
3 eggs

Sift:
3/4 cup flour

1 cup sugar
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
dash of salt

Gradually add:
2/3 cup pumpkin

1 tsp lemon juice

Fold in dry ingredients. Gradually add pumpkin and lemon juice. Spread on well greased and floured 15x10 jelly roll pan. (Another way is to grease jelly roll pan. Put in parchment paper to fit on the bottom and sides. Grease parchment paper top lightly.) Sprinkle top with 1 cup chopped nuts (optional.)

Bake 375◦ for 15 minutes. Lay out tea towel and sprinkle with powdered sugar while cooking. Loosen edges. Turn out immediately on tea towel sprinkled with powdered sugar. Start at narrow end and roll cake and towel together. Let cool for 25-30 minutes. Unroll and spread filling on unrolled cake and reroll. Cover with Saran Wrap and refrigerate 1 hour or freeze.

Filling:
Beat until fluffy:
1 cup powdered sugar

4 TBSP butter
6 oz cream cheese

1/2 tsp. vanilla

Grandma's Cookie Tins

The film canisters remind me of cookies not movies.
My great-Grandma Melba used them.
Then my Gamma Rae used them.
Then my Mom.
And now us!
We store cookie and muffins in the tins.

The large cookies were shared at the Pine Wood Derby for our pack.
The Cub Master shared the recipe.

The boys enjoy the cookies and here are some pictures of them.
