Birthday Cake

Sweetheart celebrated another birthday.

He has a favorite cake.
I make it only once a year.

Double layer chocolate cake 
with peanut butter cups in the center 
and peanut butter icing.

 I was given black cocoa and added it to the cake.
The cake was SUPER rich.

Here is the recipe again.

Chocolate Cake

2 cup flour
2 cup sugar
1/2 cup cocoa
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
2 eggs
1 cup milk
1 1/2 cup oil
2 tsp vanilla
1 cup boiling water


Mix dry ingredients. Add wet ingredients except boiling water. Beat for 2 minutes on medium speed. Stir in boiling water. The batter will be thin. Bake at 350 for 30-35 minutes in 2 (9) inch or 3 (8) inch pans. Cool for 10 minutes in pans. Place on wire rack to cook completely. Frost.

Peanut Butter Icing

1/2 cup butter
1 1/4 cup peanut butter
6 cups sifted powdered sugar
1 tsp vanilla

Mix together the following ingredients in this order. Blend in milk starting with 1/4 of a cup and continuing to add additional milk until the icing is a spreading consistency, then mix on high until light and fluff y. Spread on cooled cake.
