Elections and Cherry Pie

Today we have the opportunity to vote! Someone shared with me once that it doesn't matter what you vote personally just as long as you vote. There is a myth of George Washington cutting down a cherry tree and the honesty he had to tell the truth. In honor of elections and the Forefathers of this nation, I am sharing cherry pie.

This was a new pie that I tried. The taste is surprising with the sweet and salty.

Ingredients:

1/2 cup cherry juice
1/2 cup water
1 cup sugar
3 tablespoons cornstarch
1/8 teaspoon salt
2 cups pitted drained cherries
1 8-inch cooked pastry shell
3/4 cup grated American cheese
1 cup cream whipped

Combine juice, water, sugar, cornstarch, and salt. Heat to boiling and cook until thick.

Remove from heat and add cherries. Cool. Pour into pastry shell which has been sprinkled with the cheese. Chill. Serve with whipped cream.

Serve with whipped cream to which 2 teaspoons powdered sugar and a few drops of vanilla has been added.
