Oat Bran Muffins

Ingredients
2 1/2 cups oat bran
2 cups buttermilk
1 cup nonfat milk
1/2 cup raisins
1 large egg
1/3 cup olive oil or salad oil
1/2 cup firmly packed brown sugar
1 1/2 cups whole-wheat flour
1 teaspoon each baking soda, baking powder, and ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon salt
1/2 cup chopped walnuts (optional)

Method
In a large bowl, stir together oat bran, buttermilk, milk and raisins. Let stand 20 minutes; stir once or twice. Add egg, oil and sugar; Stir until well blended.

In another bowl, stir together the flour,soda, baking powder, cinnamon, allspice and salt. Add to oat bran mixture and stir until blended. Mix in nuts.

Spoon batter into 18 paper-lined 2 1/2-inch muffin cups, filling each flush with top. Bake in 400 degree oven until muffins are well browned and top springs back when lightly pressed, 30 to 35 minutes. Make 1 1/2 dozen muffins.
