Applesauce Oat Muffins (Arta Heaney)

1 1/2 cups oatmeal, quick or old-fashioned
1 1/4 cups flour
1/2 cup firmly packed brown sugar
2 teaspoons cinnamon
1 teaspoon baking powder
3/4 teaspoon salt (optional)
1 cup unsweetened applesauce
1/4 cup vegetable oil
2 egg whites
1 teaspoon vanilla

Combine oatmeal, flour, brown sugar, cinnamon, baking powder, baking soda, and salt. Combine applesauce, oil, egg whites and vanilla; add to oats mixture. Blend just until dry ingredients are moistened.

Fill paper-lined muffin tins almost full with batter. Bake at 375 degrees for 18 to 22 minutes or until golden brown.
