Potato Salad with a Twist

I had extra beets on hand, and I was craving potato salad. So I mixed the potatoes and the beets. It makes for an interesting colored salad. If you have extra beets, this is a different alternative to cooked beets.

Tuna sandwich, Potato/Beet Salad, Pears, Sugar Snap Peas

Potato Salad
12 Eggs (hard boiled, shelled)
8 Potatoes (cubed and cooked)
4 Beets (cubed and cooked)
1 cup mayonnaise (add or subtract mayo to liking)
A good squirt mustard
1 tablespoon garlic
1/2 cup relish or pickles

Mix together and chill. Salt and pepper to liking.

Seeing as I love beets, and I love potato salad, I think this would be a winner for me!
