Mexican Potato Hamburger Casserole

Preparation time: 20 minutes Cook time: 30 minutes

Ingredients:
2 tablespoons margarine (I used olive oil.)
1/2 green pepper, diced
1/2 cup onion, diced
1 pound hamburger
1 can (8 oz.) tomato sauce
1/2 teaspoon pepper
1 teaspoon salt
1 tablespoon chili powder
1/2 teaspoon paprika
1 can (3 1/4 oz) olives, sliced
1 can whole kernel corn, drained
4 slices cheese, cut in strips
3 cups mashed potatoes (prepared measure)

In frying pan, saute onions and peppers in margarine. Add hamburger and allow to brown, drain extra fat; add tomato sauce, spices, slat and pepper, then olives and corn. Simmer uncovered 5 minutes on low flame.

Pour into casserole dish and top with prepared mashed potatoes. Arrange cheese strips in checker-board design on top. Bake at 350 degrees for 30 minutes.

Note: I added carrots for color.
