Ingredients
2 ripe, medium bananas, peeled
1 egg, slightly beaten
3/4 cup milk
1 tablespoon vegetable oil
1 cup pancake and waffle mix
1/2 cup chopped walnuts
1/8 teaspoon ground cinnamon
Mash bananas (1 cup). Combine bananas, egg, milk and oil. Combine pancake mix, nuts and cinnamon. Stir banana mixture into dry ingredients until just moistened.
For each pancake, pour 1/4 cup batter onto a lightly greased hot skillet. Brown on underside until bubbles appear on surface. Turn and brown other side. Serve with whipped butter and warm maple syrup. Makes 20 pancakes.
