Garlic Cookies

We grew garlic over the winter since it is a cold weather crop. After harvesting the garlic to put in our summer garden, I peeled it and chopped it up. This is our entire crop.
Preserving garlic in oil has to be done very carefully. If not done properly, botulism can occur, and that is just ugly. I chose to freeze it. I took the chopped garlic and made "garlic cookies." One teaspoon is usually the one clove of garlic. By placing in 1 teaspoonful on a parchment covered cookie sheet, it was then frozen. The frozen cookies were taken off and put into another freezer bag for ease of use because it is already measured out. It works like a dream.

The garlic looks a little like macaroons to me.

Great idea! I freeze most things this way~ never garlic though.
