Pudding Cinnamon Rolls & Or So She Says

So this is the last one of the pan of these rolls that I made. They were eaten quickly.

Pudding Cinnamon Rolls
Source: Newspaper Clipping

Ingredients:
1 regular size box vanilla pudding mix (not instant)
1 stick butter
2 beaten eggs
1 teaspoon salt
2 teaspoons sugar
1/2 cup warm water
2 packages yeast
6 1/2 cups flour
Softened butter, cinnamon, brown sugar, and nuts

Method
Stir butter into warm prepared pudding. Let cool to lukewarm and then add eggs and salt. In a cup dissolve the two teaspoons sugar, warm water, and yeast. Let set for five minutes. Stir and add to pudding mixture. Stir in the flour. This makes a soft sticky dough. Cover and let rise about one hour. Punch down and let rise again about 45 minutes. Pour onto a floured board. Knead in about half cup more flour. Roll half of dough at a time into rectangular shape. Spread with softened butter, sprinkle with cinnamon, brown sugar and nuts. Roll as a jelly roll and slice in about one inch pieces (I use dental floss to cut instead of a knife.) and put in greased baking pan. Let rise 20 minutes. Bake at 425 degrees for about 15 to 20 minutes. this make two dozen cinnamon rolls.

I was also featured today on Or So She Says. Check it out if you have a chance.

Nice guest post over there! And I'm going to send the cinnamon roll one to my mom because the vanilla pudding intrigues me!
