Veterns & Peanut Butter Mousse Pie with Chocolate Ganache

Here are pictures of my veterans. I love them dearly and am grateful they have stood for our country!

My Paternal Grandpa
Grandpa K on his LCI during WWII
He entered World War II after he graduated from high school. He was on an LCI in the South Pacific. With the help of my Uncle Richard, he has recorded his memories on a website.


My Maternal Grandpa


Grandpa Glen & Gamma Rae
His wedding picture after he return from a tour of duty during the Korean Conflict. He continued to be a weekend warrior for the next 20 years. He retired with a rank of Colonel. I need to get some pictures of him in the Army, don't I? He has written a book for family to share his life experiences. It is a treasure!

My Brother-in-Law
Katie & Shaun
He is currently a weekend warrior in the Army. He has served a tour of duty. I'm grateful that he is (and my sister for that matter) willing to serve!

I cheated on the crust for this pie. It is a staple of goodness for my Sweetheart.

Peanut Butter Mousse Pie with Chocolate Ganache



Ingredients:


3 oz. cream cheese
1 c. powdered sugar
1/4 c. milk
3/4 c. peanut butter
2 c. heavy cream
1 tbsp. vanilla
2 graham cracker crust

MOUSSE: Whip the cream.

Cream the cream cheese with powdered sugar. Add milk and peanut butter.

Fold in the cream and vanilla.

GANACHE
1/2 c. cream
4 oz. chocolate chip
Warm cream to almost a boil. Remove from heat and add chocolate chips. Stir until smooth. Pour over pie.

We pour half the ganche in the bottom on the crust to have a double chocolate.
 

Notes: The pie really needs the ganache to look goo and yummy! This pie freezes great!

I loved your family photos. What a great bunch of people, and your grandpas and grandma look like movie stars! (And oh, that wedding dress!!!)

Where do I begin with my thoughts on this post!!

First, I LOVE the old pictures. MY grandparents, too, were/are war veterans (WWII and Korean War). I get emotional every time I hear the Salute to the Armed Forces played by an orchestra during patriotic holidays and celebrations. What sacrifices, and what an emotional patch in your family's quilt.

Second, I am really touched by how much you know and how much you want to know about your ancestry. It is wonderful to see all of your old photos and hear the old stories of people, real people who lived and breathed and died. You certainly know where you came from!

Third, JIFF PEANUT BUTTER IS THE BEST! I knew I liked you!

Last, is there a better combination of sweet than chocolate and peanut butter??

Thanks Wendy! Shaun was embarrassed about your post but I think he secretly loved it. I hope you have a great veterans day. We are going to go buy some cream cheese and cream to try this one. I'll let you know how it goes:)

Wendy was nice enough to give me this recipe in the past, and I have put my own little spin on it (I think it's better when it's frozen!), and it is absolutely DIVINE, almost heavenly when you eat it!
