Fabulous Raspberry Pie & Table Talk

When we moved from the East, we commissioned a table and chairs to be built for us from the Amish. We wanted a table that would be large enough to gather all our family.

 So we brought a beautiful 20 foot table. It didn't even open all the way in our condo after we bought it. When shopped for a home we needed to consider a room that would be large enough to open the table. We have celebrated with many around the table and have opened it many times.
It would have been better with people in the picture. ;-)


On Thanksgiving day, we would each go around the table and share what we were grateful for that day. This isn't a tradition that needs to be reserved for just Thanksgiving but a trait that can be developed for everyday use. Thomas S. Monson said:

A grateful heart, then, comes through expressing gratitude to our Heavenly Father for His blessings and to those around us for all that they bring into our lives. This requires conscious effort—at least until we have truly learned and cultivated an attitude of gratitude. Often we feel grateful and intend to express our thanks but forget to do so or just don’t get around to it. Someone has said that “feeling gratitude and not expressing it is like wrapping a present and not giving it. 1
In our home, my husband will ask different questions at supper like:
  • What did you do to help someone today?
  • What was your happy today?
  • What was your sad today?
Our son has started to turn the questions around and ask us those questions. So what will your table talk be tonight?

This pie is yummy!

Ingredients:

1 graham cracker crust
1 package (10 ounces) frozen raspberries, thawed
1/3 cup sugar
1 egg white
1/2 cup whipping cream, whipped

Combine undrained raspberries, granulated sugar and egg white. Blend at low speed. Beat with electric mixer at high speed for 10 minutes or until firm peaks form.

Whip cream until it holds its shape. Fold whipped cream into raspberry mixture. Turn into chilled shell. Sprinkle with 2 tablespoons reserved crumb crust if making crust from scratch.

Freeze three to four hours or until firm. Garnish with additional whipped cream. Wrap frozen pie in plastic for longer storage.

Notes:
I used a chocolate cookie crust instead of a traditional graham cracker crust. I garnished with chocolate sauce, raspberries, and cream.
