Sour Dough Hot Cakes

Ingredients
1 c. starter
2 c. unsifted flour
2 c. milk
1 tsp.salt
2 tbsp. sugar
2 tsp.soda (a little more if sourdough is very sour)
2 eggs
3 tbsp melted shortening or bacon grease

About 12 hours before serving, or the night before mix starter, flour, milk, and salt and let stand in a cloth covered bowl in a warm place.

Just before baking cakes, remove 1 cup batter to replenish sourdough starter in the crock.

To remaining batter in bowl, add soda, eggs, shortening, and sugar. Bake on a hot griddle. Makes about 30 dollar size cakes.

If any batter is left from the pancakes, use it in BISCUITS. Take 2 tsp baking powder, 1 tsp. salt, add as much flour as needed. Roll over and put in a 9 inch cake tin, score top, let rise 1/2 to 1 hour. Bake at 425 degrees for 15 minutes.
