Cottage Cheese Pancakes with applesauce

3 eggs
1 cup sieved cottage cheese
2 tbs. salad oil
1/4 cup flour
1 tsp. salt
Dash of cinnamon
1 cup applesauce

Beat eggs until light in color, blend in cheese and oil. Sift flour, salt and cinnamon into the mixture, stir until just blended. Bake on hot griddle until brown on each side.Spoon applesauce on each cake and roll it up.

Note: To prepare the night before, roll pancakes with applesauce and place in a baking dish,cool, cover with foil, and refrigerate. In the morning,uncover and bake in a 350 degree F oven for 15 minutes.
