Beaten Biscuits

Ingredients
2 cups all-purpose flour
1 teaspoon sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup lard or shortening
1/3 cup milk
1/4 cup cold water

Stir together flour, sugar, baking powder, and slat. Cut in lard till mixture resembles coarse crumbs. Combine milk and water. Add the milk mixture, 1 tablespoon at a time, to flour mixture till dough sticks together. Dough should be stiff.

Turn dough out onto lightly floured surface. Beat vigorously with the flat side of a wooden spoon or a metal mallet for 15 minutes, turning and folding dough frequently. On a lightly floured surface roll dough to about 3/8-inch thickness. Cut dough with floured 2-inch biscuit cutter. Dip cutter into flour between cuts. Place biscuits on ungreased baking sheet. Prick the top of each biscuit 3 times with tine of fork. Bake ina 425 degree oven for 18 to 20 minutes or till light brown. Mak 16 to 18.
